What You Need
Makes 1 plate Batch it

Before You Start

Press the tofu dry and cube it, shred the cabbage, rinse the spinach, and grate the ginger.

How To Make It
  1. Season the tofu and sear it in the sesame oil over medium high, 6 to 8 minutes, turning, until golden and crisp on several sides, then set it aside.
  2. Cook the shredded cabbage in the same pan, 4 to 5 minutes, until wilted and just tender.
  3. Add the spinach and cook, 2 to 3 minutes, until it wilts down and turns glossy.
  4. Add the tamari and ginger and toss, about 1 minute, until glossy and coated.
  5. Return the tofu, top with the sesame seeds and scallions, and serve over the brown rice.
Fix It: If the tofu is bland, let it sit in a little tamari before searing so the flavor soaks in.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
