What You Need

Before You Start

Pat the sirloin dry and season it, trim the green beans, mince the garlic and grate the ginger, and stir the yogurt smooth.

How To Make It
  1. Season the beef sirloin, warm a pan over medium high, and sear 3 to 4 minutes a side, until browned and it reaches 145°F in the center, then set it aside.

  2. Rest the sirloin 3 minutes, then slice it thin against the grain.
  3. Cook the green beans in the same pan 4 to 5 minutes, until bright and just tender.
  4. Add the cauliflower rice and cook 4 to 5 minutes, until tender and steaming.
  5. Add the spinach and cook 2 to 3 minutes, until wilted and glossy.
  6. Bloom the cumin, smoked paprika, garlic, and ginger 1 minute, until fragrant, then stir in the yogurt off the heat so it does not curdle.
  7. Serve the beef and vegetables over the cooked rice with the cilantro on top.
Fix It: If the yogurt sauce splits into curds, the pan was too hot; stir it in off the heat and it stays creamy.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
