What You Need
Makes 1 plate Batch it

Before You Start

Squeeze the cooked spinach dry so the bake does not turn watery.

How To Make It
  1. Heat the oven to 375°F and oil a small baking dish.
  2. Brown the turkey in a skillet over medium-high heat for 6 minutes until no pink remains and it reads 165°F, then spoon off any fat.

  3. Add the mushrooms, garlic and oregano and cook 5 minutes until browned, then stir in the spinach for 1 minute until wilted.
  4. Spread the mix in the dish, whisk the eggs with the pepper, pour them over and scatter the feta.
  5. Bake 18 to 20 minutes until the eggs are set in the center and read 160°F.

  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 3 days, then reheat it covered for 1 to 2 minutes until steaming and 165°F in the center.

Fix It: If liquid pools on top after baking, rest it 5 minutes; the eggs absorb it as they cool.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 30 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
