What You Need
Makes 1 plate Batch it

Before You Start

Take the pork out of the fridge 15 minutes early so it roasts evenly.

How To Make It
  1. Heat the oven to 425°F.
  2. Rub the pork with the paprika, garlic, salt and half the olive oil.
  3. Toss the zucchini and mushrooms with the rest of the oil and spread them around the pork on a sheet pan.
  4. Roast 20 to 22 minutes until the pork reads 145°F and the vegetables are browned, then rest the pork 5 minutes.

  5. Slice the pork, sprinkle the vinegar over the pan and top with the parsley.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the parsley separate, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the pork reaches 145°F before the vegetables brown, move it to a board and roast the pan 5 more minutes.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
