6 oz seared chicken thigh over 1.5 cups garlicky mushrooms and 1 cup wilted spinach, finished with 2 tablespoons feta, oregano and lemon.

What You Need
Makes 1 plate Batch it

Before You Start

Slice the mushrooms and mince the garlic first; the chicken cooks fast once the pan is hot.

How To Make It
  1. Pat the chicken dry and season it with the oregano, salt and pepper.
  2. Warm the olive oil in a large skillet over medium-high heat for 2 minutes until it shimmers.
  3. Sear the chicken 6 minutes per side until golden and a thermometer reads 165°F, then move it to a plate.

  4. Cook the mushrooms in the same pan for 6 minutes until browned and their liquid has cooked off.
  5. Add the garlic and spinach and cook 2 minutes until the spinach is wilted.
  6. Slice the chicken over the vegetables, squeeze the lemon over everything and scatter the feta.
  7. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the mushrooms turn watery, raise the heat and cook 2 more minutes until the pan is dry and they brown.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
