6 oz ground chicken with cumin, oregano and smoked paprika over 1 cup sauteed cabbage and 1 cup spinach, with 1 slice cheddar, lime and cilantro.

What You Need
Makes 1 plate Batch it

Before You Start

Shred the cabbage before the pan goes on.

How To Make It
  1. Warm the olive oil in a large skillet over medium-high heat for 1 minute until it shimmers.
  2. Brown the chicken 7 minutes, breaking it up, until no pink remains and it reads 165°F, then spoon off any fat.

  3. Stir in the cumin, paprika, oregano, garlic and salt and cook 1 minute until fragrant.
  4. Add the cabbage and cook 5 minutes until tender, then add the spinach for 1 minute until wilted.
  5. Lay the cheddar on top and cover 1 minute until it melts, then squeeze the lime over and top with the cilantro.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container and keep the cilantro separate, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

Fix It: If the chicken looks dry, stir in 2 tablespoons water with the spices.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
