What You Need

Before You Start

Pull the sirloin out 10 minutes ahead and pat it dry, soak the rice vermicelli per the package, shred the carrot, chop the bok choy, and chop the herbs.

How To Make It
  1. Warm a skillet over medium high heat, about 1 minute, until a drop of water sizzles.
  2. Season the sirloin, add it, and sear, turning once, 3 to 4 minutes per side, until deep brown and it reaches 145°F in the center, then rest it 3 minutes.

  3. Add the carrot to the pan and cook 3 to 4 minutes, until it softens and turns bright.
  4. Add the bok choy and cook, 2 to 3 minutes, until the stems soften and the leaves wilt, then toss with the lemongrass, garlic, and a squeeze of lime off the heat.
  5. Slice the rested sirloin and serve it with the vegetables, cilantro, and mint over the rice vermicelli.
Fix It: If the sirloin browns too fast, lower the heat so it reaches 145°F inside without the outside burning.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
