Before You Start

Pull the steak out about 10 minutes ahead and pat it dry, heat the oven to 400°F, and cube the potato so the tray can go in first.

How To Make It
  1. Heat the oven to 400°F, toss the cubed potato and green beans with the olive oil and garlic, and spread them on a tray in a single layer.
  2. Roast, 18 to 20 minutes, until the potato is tender and the edges are golden and crisp.
  3. While the tray roasts, sear the sirloin in a hot dry pan, 3 to 4 minutes per side, until a deep brown crust forms and it reaches 145°F in the center, then move it to a board and rest 3 minutes so the juices settle.

  4. Wilt the spinach in the same pan, 1 to 2 minutes, until just collapsed and bright.
  5. Slice the steak, plate it with the potato, green beans, and spinach, and serve hot.
Fix It: If the steak is browning too fast before it reaches 145°F, lower the heat to medium and give it another minute a side.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
