What You Need

Before You Start

Pat the pork dry and season it, trim the green beans, rinse the spinach, drain the black beans, and juice the lime and chop the cilantro.

How To Make It
  1. Sear the pork tenderloin in the olive oil, 4 to 5 minutes per side, until deep golden and it reaches 145°F in the center, then set it aside to rest.

  2. Add the green beans to the pan with a splash of water and cook, 6 to 7 minutes, until bright and just tender.
  3. Add the black beans, spinach, cumin, and garlic and cook, 3 to 4 minutes, until the spinach wilts and the beans are hot.
  4. Finish with a squeeze of lime and the cilantro off the heat.
  5. Slice the pork and serve it with the beans and vegetables over the rice.
Fix It: If the beans look dry, add a splash of water so they stay creamy instead of pasty.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
