What You Need

Before You Start

Trim the green beans and quarter the bok choy so the thick stems cook through.

How To Make It
  1. Simmer the water, fish sauce, lime juice, ginger, and garlic in a wide pan for 2 minutes until fragrant.
  2. Add the cod, cover, and poach for 8 minutes until the fish flakes easily and reaches 145°F.

  3. Lift the cod onto a plate and keep it warm.
  4. Add the green beans to the broth and steam covered for 6 minutes until crisp tender.
  5. Add the bok choy and cook for 3 minutes until the stems soften and leaves wilt.
  6. Spoon the vegetables and broth over the cod and finish with fresh cilantro.
Fix It: If the cod is not flaking yet, cover and poach for 2 more minutes before checking again.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
