Before You Start

Halve the sprouts and dice the sweet potato small so they finish with the turkey.

How To Make It
  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. Toss the brussels sprouts and sweet potato with half the olive oil and roast 12 minutes, until they start to brown.
  3. Toss the turkey and mushrooms with the rest of the oil, the rosemary and garlic, and add them to the pan.
  4. Roast 12 to 15 minutes more, until the turkey reaches 165°F with no pink and the sprouts are crisp at the edges.
    165°F
  5. Pile it onto a plate and serve hot.
Fix It: Sprouts still hard? Roast 4 minutes more, cut side down.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
