What You Need
Makes 1 plate Batch it

Before You Start

Slice the sirloin thin, dice the bell pepper, cut the broccoli into florets, trim the bok choy, and mince the garlic and grate the ginger.

How To Make It
  1. Season the beef and sear it in a hot pan over high heat, 2 to 3 minutes, until browned and it reaches 145°F in the center, then set it aside to rest 3 minutes.

  2. Cook the broccoli and bell pepper in the same pan, 4 to 5 minutes, until crisp and tender and lightly charred at the edges.
  3. Add the bok choy and cook, 2 to 3 minutes, until the leaves wilt and the stems are tender.
  4. Return the beef, add the coconut aminos, ginger, garlic, and sesame oil, and toss, about 1 minute, until glossy and coated.
  5. Top with the scallions and serve over the brown rice.
Fix It: If the garlic browns too fast and smells sharp, pull the pan off the heat for a moment so it does not turn bitter.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
