Before You Start

Slice the garlic thin and even so it turns golden, not bitter.

How To Make It
  1. Heat the oven to 425°F.
  2. Rub the pork with the paprika, salt and half the oil and roast 20 to 22 minutes until it reads 145°F; rest it 5 minutes.
    145°F
  3. Warm the rest of the oil in a skillet over medium heat and cook the garlic 1 minute until golden.
  4. Add the cabbage and water and braise 8 minutes until tender, then stir in the spinach for 1 minute until wilted and the vinegar.
  5. Slice the pork over the cabbage.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.
    165°F
Fix It: If the cabbage is still firm when the water is gone, add 2 tablespoons water and cover 2 minutes.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 25 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
