What You Need

Before You Start

Use thighs, not breasts; they stay juicy over the long cook.

How To Make It
  1. Set the chicken in the slow cooker with the mushrooms, tomato, garlic, oregano, salt and oil.
  2. Cook on LOW 5 to 6 hours until the chicken is tender and reads 165°F.

  3. Stir in the spinach and basil and cook on HIGH 5 minutes until the spinach is wilted.
  4. Skim any fat from the top of the sauce.
  5. Break the chicken into large pieces in the sauce.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 3 to 4 minutes until steaming and 165°F in the center.

Fix It: If the sauce is thin, cook uncovered on HIGH 20 minutes until it thickens.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
