Zucchini boats (1 cup) filled with 6 oz pork, 1 cup mushrooms and tomato, baked under 1/4 cup mozzarella.

What You Need
Makes 1 plate Batch it

Before You Start

Use a teaspoon to scoop the zucchini, leaving a 1/4 inch wall so the boats hold.

How To Make It
  1. Heat the oven to 400°F, halve the zucchini lengthwise and scoop out the centers.
  2. Warm the oil in a skillet over medium-high heat and brown the pork 6 minutes until no pink remains and it reads 160°F; spoon off any fat.

  3. Add the mushrooms, garlic, oregano and salt and cook 4 minutes until browned, then stir in the tomato.
  4. Fill the zucchini with the pork mix, top with the mozzarella and bake 20 minutes until the zucchini is tender and the cheese is bubbling.
  5. Rest the boats 5 minutes before cutting.
  6. To keep it: cool it within 2 hours, portion it into a shallow lidded container, refrigerate up to 4 days, then reheat it covered for 2 to 3 minutes until steaming and 165°F in the center.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 30 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
