Before You Start

Pit the date and get the blender out first.

How To Make It
  1. Soak the date in hot tap water for 5 minutes so it blends smooth, then drain.
  2. Blend the cottage cheese, cocoa powder, date, and vanilla until completely smooth, about 1 minute.
  3. Spoon into a small cup and chill 20 minutes so it firms up.
  4. Top with the grated dark chocolate and the raspberries.
Fix It: If you can still see curds, blend 30 seconds more and scrape down the sides.
