Before You Start
Line the loaf pan so the bread lifts straight out.
How To Make It
Preheat the oven to 350°F and line a small loaf pan with parchment.
Blend 1 1/2 cups of the oats into flour, about 30 seconds.
Stir in the whole oats, chia, flax, baking powder, and salt, then the eggs and greek yogurt, until thick.
Spread into the pan and bake 30 to 35 minutes, until the top is golden and a toothpick comes out clean.
Cool 20 minutes in the pan before slicing.
Fix It: If it crumbles when sliced, let it cool completely; it firms as it cools.
Air Fryer
- Heat the air fryer to 380F.
- Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
- Cook for about 30 minutes, shaking the basket halfway, until cooked through and lightly crisp.
- Let it rest a minute, then finish and plate the dish as written in the steps above.
