What You Need
Makes 1 plate Batch it

Before You Start

Mash the bananas well; they are the sweetener.

How To Make It
  1. Heat the oven to 350°F and line a 12 cup muffin tin.
  2. Blend the oats into flour, about 30 seconds.
  3. Stir the bananas, eggs and greek yogurt together, then fold in the oat flour, baking powder and cinnamon until just combined.
  4. Fold in the blueberries and spoon the batter into the cups.
  5. Bake 20 to 22 minutes, until a toothpick comes out clean.
  6. Cool 10 minutes in the tin before you lift them out.
Fix It: Muffins sinking in the middle? Bake 3 minutes more next time.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
